Keeping a just measure in how we deal with light and air, eating and drinking, work and leisure, sleeping and waking, thoughts and feelings – Hildegard’s concept sounds simple, and that’s what it is: simple.
Interestingly, our ties with Hildegard of Bingen have been formed already by my grandmothers, who – unknowingly – cooked according to her rules. Only later my mother Antonia made the connection to the medieval mystic and naturopath. If I may say so, Hildegard of Bingen was a rather WILD WOMAN herself and a far cry from the boring lady some of you might imagine. Her approach to eating, her knowledge of the effects and proper use of food is simply fascinating.
Cooking well, eating well and pampering our guests is our mission at the SCHWANEN. Cooking Hildegard-style requires produce of the highest quality and keeping the just measure in all areas of life. Healthy indulgence is no contradiction, it is the result of our very modern way of cooking.
