I'm a pretty detail-loving person. At the SCHWANEN I can live out this passion to the full. The culture of the table is particularly close to my heart.

When I first visited the Benu restaurant in San Francisco, where I would later work, I was absolutely delighted with the dishes there. Corey Lee develops his own plates for new dishes & signature dishes. These are not hidden in the cupboard, but are presented in the room as styling elements. The Benu works closely with KwangJuYo, a traditional ceramic workshop in South Korea. I have now transferred this knowledge and understanding of crockery or "China", as they say in the USA, to SCHWANEN. I loved my mother's dishes, but the plates from European manufacturers didn't really meet my expectations. What bothered me the most was the sound, i.e. the noise when two plates were put together. I wanted to change that. On vacation I flew to South Korea and watched the production of KwangJuYo.

Pottery craftsmanship, beauty of form, history - all of this is now also expressed in the tableware in the SCHWANEN. The shape, sound and feel of the plates are harmonious: A great stage for the WILDE WEIBER kitchen and a link from the Bregenzerwald to the world outside.
