The story of Hildegard von Bingen in the SCHWANEN actually started with my grandmothers. They unconsciously cooked by their rules. My mother Antonia first made the connection to the mystic and naturopath of the Middle Ages. With all due respect, Hildegard von Bingen was also a WILD WOMAN and anything but boring, as some of you might think. The fascinating thing about her nutritional theory is learning the effects and the correct use of food. Cooking well, eating well and spoiling ourselves and our guests is our claim at the SCHWANEN. The Hildegard kitchen demands the highest quality of the raw products and demands the right balance in all areas of life.
Healthy pleasure is not a contradiction of terms, but a modern approach to cooking!
She is the boss of a modern convent, publishes bestsellers and is in constant contact with powerful and famous men.
This is how one would describe Hildegard von Bingen today and perhaps nod approvingly. Her position as polymath, writer and abbess is unique in the Middle Ages.
In 2012 she officially received the title of “Doctor of the Church” from the Pope and was promoted by Pope Benedict XVI. canonized.
