The story of Hildegard von Bingen in the SCHWANEN actually began with my grandmothers. They cooked unconsciously according to her rules. It was my mother Antonia who first established the connection to the mystic and naturopath of the Middle Ages. With respect, Hildegard von Bingen was also a WILDES WEIB and anything but boring, as some of you may think. The fascinating thing about her nutritional teachings is learning the effects and proper use of food. Cooking well, eating well and thus spoiling ourselves and our guests is our claim at SCHWANEN.
